"Associazione Verace Pizza Napoletana" - 'Napoli PizzasĂ˝ Üreticileri BirliĂ°i' gerçek Napoli pizzasĂ˝nĂ˝n malzemeleri, hamuru ve piĂžirilme Ăžekli ile ilgili olarak bazĂ˝ kurallar getirmiĂžtir.

Merwe's Pizzeria  da bu kurallara uymaktadĂ˝r.
Bu kurallar Þunlardýr;

1.
Hamur un, yaÞ maya, tuz ve sudan yapýlmalýdýr.
2. Hamur elle veya hamur karýÞtĂ˝rĂ˝cĂ˝sĂ˝yla aÞýrĂ˝ derecede Ă˝sĂ˝nmadan açĂ˝lmalĂ˝dĂ˝r
3. Fýrýn odunla ýsýtýlmalý, kubbe Þeklinde olmalý ve volkanik taÞtan imal edilmelidir.
4. Pizza fýrýnýn volkanik taÞtan zemininde piÞirilmeli ve herhangi bir tepsi veya kap kullanýmamalýdýr.

Pizza . Zaman içerisinde "deep-dish pizza", "pan pizza", "pizza strudel", "stuffed pizza" gibi farklĂ˝ zevklere hitap eden farklĂ˝ pizza çeĂžitleri ortaya çĂ˝kmýÞ hatta bazĂ˝larĂ˝ gerçek pizzayĂ˝ tatmayanlara gerçek Ýtalyan pizzasĂ˝ olarak tanĂ˝tĂ˝lmýÞtĂ˝r.

 

Ancak Merve's pizzeria  günlük olarak hazĂ˝rlanan hamuru, rende domatesten yine günlük olarak üretilen sosu ve odun ateĂžinde piĂžirilen pizzanĂ˝n tadĂ˝nĂ˝ diĂ°er pizzalarĂ˝n tadĂ˝yla karýÞtĂ˝rmayacaĂ°Ă˝nĂ˝za eminiz

Wood-Fired


There is no big secret to this, at least not a world's best-kept secret. A wood-fired pizza oven heats up and cooks our meals a lot better because of the heat stored in the dense walls. This heat radiates across the dome very evenly while the floor of the oven is slightly cooler than the top under which we place our meals. When the oven gets really white hot inside, for certain type of pizza the baking temperature can be far above 300°C - 572°F or 350°C - 662°F and maintained by keeping a continuous small fire going. It's in this environment that a good pizza is made.
